These easy egg noodles are a great low carb and gluten free replacement for pasta and noodles. Just 2 ingredients for a quick and easy recipe.

Low carb egg noodles are so simple to make. Mix, bake, slice and slather with a sauce. It’s really just that easy! The hardest part of the recipe is deciding what you are going to serve with them or have them simply by themselves.

If you wanted more of a pasta noodle substitute you could add mozzarella cheese or a dash of psyllium husk powder to the mixture before baking. Add herbs of your choice. This is an easy keto egg noodles you can add your own touch too.

Although these egg noodles are great with a stir fry, I prefer to serve mine with a creamy sauce. Either a mushroom or spinach sauce are my choice.

Ingredients

  • 1 oz cream cheese softened
  • 2 eggs

Instructions

  • Preheat the oven to 170C/325F degrees

  • Line a square 8 inch baking tin with parchment paper.

  • Place the cream cheese and eggs in a bowl and beat until smooth.

  • Pour the mixture into the tin and shake until evenly covered.

  • Bake for 8 minutes

  • Cool for 5 minutes, then gently remove the cooked mixture from the tin

  • Gently roll the egg up like a swiss roll. Using the parchment paper to do this can help.

  • Cut the rolled mixture into 1 cm slices

  • Arrange on a plate, slightly unravelled and cover with your sauce of choice.

    A table spoon of psyllium husk seems a lot. Did you mean a teaspoon?

    I would like to add the psyllium husk powder or mozzarella cheese to make a more noodle texture. How much should I use and is one better than the other to achieve that texture? I like the idea of the psyllium husk powder because maybe I can use this recipe to make larger noodles for a lasagna. I have tried other noodles made with cheese and they seem to melt when layering with the sauce. I've never used psyllium husk so not sure about it.

      I would add about a tablespoon of psyllium husk powder BUT would process it in a coffee grinder first to make it extra finer.

    It says pour into a tin and shake until evenly covered, is there something in that tin that's going to cover it?? Sorry just confused

      The base of the tin is covered with the mixture.

        Oh so you just mean shake it to distribute the egg mixture right? not shake like when dredging or breading. correct? sorry. i have covid and one of those headaches. i thought maybe i missed a step... also thinking... wait... this cant be THAT easy! 😀

            aw... thanks love!!!! its been a month now!!! I have two autoimmune diseases or disorders so it takes me literally ... well if my other family catches a common cold or even the sniffles, they are done with it in a matter of days, me.... 2-3 weeks. so this has been a month and isnt letting up. fun, fun, fun. I literally left the house twice since march, once to drop my moms car off to her in march and came straight home, didnt even go in, ... got out of the car, waved to her in her window and got in my car. then to get tested and somehow got it. i have always made the joke that if someone coughs within a five mile radius i get the plague... but dang... i guess its NOT a joke when there is a pandemic. are you stateside or across the pond? please PLEASE all yall readers , PLEASE take mask wearing serious!!!! if someone, whoever I got it from (not even realizing they had this illness) had just worn a mask, I would not have gotten it and I dont know when or if i WILL GET over it. please be careful for yourselves first but for others as you may not even know you have it. i speak from personal experience. TAKE CARE OF YOU AND YOUR LOVED ONES. The only thing we can think of is my hubby brought it in from outside and he is religious about wearing a mask but someone else wasnt and he was asymptomatic and now i cant get rid of it. Our state mandates that I must now wear a mask (even to sleep in) 24/7..., cant leave the house, no one can come in it from the outside that doesnt live here. be careful dear ones!!! dont end up like me.
            sorry. didnt mean to soap box... i just dont want anyone having to feel like i do. its horrible and lonely and suffocating!!!

            We are quite strict here and although the last case of Corona has gone, masks are mandatory everywhere. However, we have just opened our borders to the USA which we are dreading as the first case of Corona back in March was from a tourist.
