Ingredients

  • 8 ounces fresh spinach
  • 4 cups water
  • 1 clove garlic, minced
  • 1 green onion, chopped
  • teaspoons soy sauce
  • teaspoons sesame oil
  • 2 teaspoons toasted sesame seeds
  • ¼ teaspoon salt, (optional)

Instructions

  • Wash the spinach thoroughly under running cold water. Rinse twice and cut the root ends of spinach.

  • Boil 4 cups of water on high heat in a large pot. Blanch the spinach for 30 seconds.

  • Remove the spinach from the heat and rinse in cold water a couple of times. Squeeze out excess water from the spinach with hands.

  • In a medium mixing bowl, add minced garlic, green onion, soy sauce, sesame oil, and sesame seeds. Add salt according to your liking. Add spinach and mix well.

    How do the spring onions taste caramelised without heating them?! This was amazing. I would quite happily eat bowls of this as a snack, lunch, dinner and maybe even breakfast. This will be a go to recipe for me. Great way to add more veggies to dishes

    Is blanching the spinach necessary? can the same effect come from briefly microwaving the damp leaves?
