Southern Style Chicken

What is it about that southern style crispy chicken that tempts us all. I don't know about you, but it was one of my favorite takeaways before I ever embarked on a healthy eating lifestyle. That KFC bucket just tempted me every time, the crispy coated chicken, the fries, the gravy, the buttered corn, the creamy coleslaw and even the beans. Combined together it was just amazing. I never once thoughtabout the ingredients or the calories in those moments, because it wasso darn good and I didn't care.

I even remember the time you used to get a free Viennetta ice cream and a bottle of pop. So unhealthy really when you combine it all together, it was not a surprise I was overweight.

Creating Fakeaways on Slimming Eats and Weight Watchers

Just to get the record straight, I wasn't eating this every week, hell I probably wasn't even eating it once a month, but a combination of all those unhealthy foods combined together was definitely what caused me to gain weight in the first place.

All those free foods at our disposal, we can create healthier and most often tastier versions of all those foods we love. Which in turn meanswe don't ever feel like we are missing out on anything.

It's a much more manageable lifestyle of healthy eating and not a fad short term diet that you can not stick to.

Now I can't promise you the latter two things (i.e the ice cream and the pop). But I do promise you everything else.

AND - I am going to blow my own trumpet here. My version of this ever so popular take out meal is pretty darn amazing if I do say so.

All the components can take a while to put together, but it makes a great family sharing meal. My kids love it when I place this KFC Style Chicken all on the table and we dig in.

I enjoy this oven baked KFC style chicken version so much more too, because I am content knowing exactly what ingredients have gone into it, the fact it is much healthier and even better homemade. I also don't get the after eating regret of - Oh my god why did I just eat all that?

Can this be made Gluten Free?

I use 100% whole wheat (wholemeal) bread to make my own breadcrumbs, meaning you can use your points towards the chicken.

To do the same if you are gluten free, you'd need to use a gluten free healthy extra bread choice to make the breadcrumbs or if you prefer you can just use some gluten free bread crumbs.

Can this made dairy free?

Because the buttermilk is used to make this chicken and really helps tenderize the chicken, I don't recommend skipping the buttermilk in this recipe.

However it would possibly work by using a dairy free yoghurt instead with some lemon juice and marinating in that overnight like you would with the buttermilk. Do let me know how it turns out if you try.

Best cuts of Chicken for Kentucky Style

As for what pieces of chicken to use that is entirely up to you, but I recommend bone in, either drumsticks, thighs or quarters, just make sure you remove the skin and any visible fat, so thatthose chicken pieces prior to coating remain lean. Avoid using breast meat for these, you just won't get the same result.

It's best to bake these chicken pieces on some baking sheets lined with parchment paper, it will prevent any sticking, as the last thing you want is to pull off all that delicious flavoured seasoned coating.

Substitute for Buttermilk

I recommend the buttermilk, it seriously is what makes the chicken, that overnight marinating in the buttermilk does something amazing, the chicken is so tender when cooked.

But don't worry if you can't get buttermilk. Just add 2 tbs of vinegar or lemon juice to the milk along with 2 tbs of fat free plain yogurt, leave for a little while to go sour and it will work just as well.

Oven Baked KFC (Kentucky Fried) Chicken

Oven Baked KFC Style (Kentucky Fried) Chicken - make this yummy healthier Kentucky fried chicken for the ultimate fakeaway feast in your own home for the whole family to dig in and enjoy.

Ingredients

  • 8 Chicken Pieces, drumsticks or bone in thighs are best (all skin and visible fat removed)
  • 1 cup (240ml) of buttermilk (*see note)
  • spray oil
  • 8 slices of low calorie wholemeal (whole wheat) bread
  • 2 eggs, beaten
  • 1 teaspoon of salt
  • 1 teaspoon of oregano
  • 2 teaspoons of garlic salt
  • 1 teaspoon of onion powder
  • 1 teaspoon of thyme
  • 1 teaspoon of ground ginger
  • 1 teaspoon of basil
  • 1 teaspoon of celery seed
  • 1 teaspoon of black pepper
  • 1 teaspoon of mustard powder
  • 3 teaspoons of paprika

Instructions

  1. Put chicken in zip lock bag or dish (that you can cover), add the buttermilk, shake to thoroughly coat and place in the refrigerator overnight.
  2. Then when you are reading to make your KFC style feast, the following day you can go to the next step.
  3. Very lightly toast the pieces of bread (I find this gives a much crispier coating) and allow to cool
  4. Preheat oven to 200c, fan 180c or 400f (gas mark 6)
  5. Place lightly toasted bread in a food processor and blitz until fine breadcrumbs.
  6. Line a large baking tray with some parchment paper and spray with spray oil
  7. Add the breadcrumbs to a bowl, along with all the herbs and spices and mix thoroughly
  8. Remove the chicken pieces from the bag (or dish) and discard of the bag and leftover buttermilk.
  9. Add the breadcrumb mix to a dish or plate.
  10. One by one dip each chicken piece in the beaten egg and then roll into the breadcrumbs (pat the breadcrumbs firmly into the chicken with hands to ensure each chicken piece is thoroughly covered with the breadcrumb mix.
  11. Place the chicken pieces onto the parchment lined tray and spray over the top with spray oil.
  12. Bake in the oven for approx 45 mins, until the chicken is lovely and golden and cooked through.
  13. Serve chicken with your choice of sides (see recipe post for suggestions)
  14. Enjoy!!!
